apple and rhubarb crumble

3) Mother’s Day Quick Crumble Mix

This delicious, warming crumble from Cooking them Healthy will make a perfect Mother’s Day dessert. Plus, it's filled with goodness! It is made with seasonal apple and rhubarb, both providing vitamin C and pectin which is helpful for the digestive system.

 Ingredients:

  • 150g wholegrain spelt flour
  • 100g butter, chilled and chopped into cubes
  • 50g light muscovado sugar
  • 1 cooking apple (approx 250g), chopped
  • 160g rhubarb, chopped
  • 3 tbsp runny honey
  • 1 tsp cornflour
Instructions:
  • Preheat the oven to 180C.
  • Sift the flour into a bowl then add the chilled chopped butter. Using your fingertips, gently “rub in” the butter, in a light and airy manner, ensuring you keep your hands lifted above the bowl to keep the mix light. Rub the butter and flour together until the butter disappears and you are left with a light-looking crumble that resembles breadcrumbs.
  • Stir in the sugar
  • In another bowl add the chopped apple and rhubarb, and mix through the cornflour and runny honey
  • Place the fruit into a cooking dish – this works well as both individual ramekins, sharing large ramekins or a large dish.
  • Next sprinkle over your crumble topping. If you have any left over keep in a food bag in the freezer for future use as really useful.
  • Bake in the oven until cooked through. This will vary depending on the size of your dish but should be around 20-40 minutes. When the fruit feels soft and the crumble is bubbling around the edges.
  • Serve with natural yoghurt.

These delicious and healthy muffins from Cooking them Healthy are perfect for Mother's Day breakfast or brunch – plus they freeze brilliantly, so you can always have them to hand.

Ingredients:

  • 170g white or wholemeal spelt flour (or gluten free if required)
  • 1½ tsp ground cinnamon
  • ½ tsp bicarbonate of soda
  • ½ tsp baking powder
  • 30g dark muscovado sugar
  • 30g maple syrup
  • 1 pear, grated
  • 1 cm fresh ginger grated in (don’t bother cutting the skin off)
  • 40ml coconut oil (melted)
  • 1 egg
  • A large handful of raisins
  • Splash of milk (nut, almond, coconut or regular dairy all work – approx 40 ml)
  • Oats to sprinkle at the end
Instructions:
  • Preheat the oven to 180C.
  • Line your muffin tin with muffin cases.
  • Place your dry ingredients into a large bowl and mix together (flour, cinnamon, bicarbonate of soda, baking powder, sugar).
  • Place all your wet ingredients into another large bowl and mix (egg, grated pear, ginger, coconut oil, maple syrup).
  • Sift your dry ingredients over your wet ingredients and gently fold the mixture together. Add your raisins.
  • If it feels a bit thick add a splash of milk (you can use dairy free alternatives or even just water to help loosen – approx 40ml). Try not to over stir as it will result in a dense muffin.
  • Spoon into your muffin cases two thirds full and sprinkle with oats.
  • Place in the oven and cook for 15 minutes or until a skewer can be inserted and when removed it comes out clean.
