Cooking them Healthy is a blog that provides healthy, effortless and delicious recipes focused on the nutritional needs of your child – and they’ve created a nutty snack bar recipe just for us!

If you’d like to find out how to make these nutritious and delicious nut bars, then read on…

Nutty Snack Bars

100g ground almonds
50g nut butter (cashew, almond or natural peanut butter)
80-100g coconut oil
130g honey
150g mixed nuts, roasted
10g chai and poppy seeds
50g raisins
70g dried apricots
50g dried cranberries
70g puffed rice
20g mixed seeds

  • Pre-heat the oven to 200 degrees and roast the mixed nuts for 10-15 minutes until lightly golden.
  • Place the nut butter, ground almonds, coconut oil and honey into a saucepan and heat all together until melted. Once melted, add the other ingredients and mix well until covered.
  • Line a baking tray with silicone/ non-stick greaseproof paper and pour the mixture out. Press it down firmly and place in the fridge to set. When set, cut into bars and store in an airtight container – although we suspect they won’t last long!
